Ibicenco Country Salad

Ensalada Payesa from Ibiza, Mallorca, Menorca:

Number of servings: 4 persons

8 potatoes
2 tomatoes
2 red peppers
2 hard-boiled eggs
2 garlic cloves
1 onion
olive oil


Boil the potatoes in plenty of water for about 25 minutes. Strain, peel, dice and place them in a salad bowl. Add the tomatoes, eggs, onion and cut peppers. Dress with olive oil and salt. Serve cold.
